Thali Deluxe is our love letter to India's flavourful vegetarian recipes, where leafy greens, gourds, yams or roots aren’t the substitute or side, they’re the heroes.
With both my mother and grandmother being vegetarians, most daily meals at home would be daals, grains, fruits & vegetables. Meats, admittedly either chicken or lamb would be a treat for us kids, saved for special occasions, parties, weekends and cheat days.
I remember accompanying my grandma to the neighbourhood mandi (farmer’s market) every Tuesday or Thursday, tote bag on shoulder, her closely calculated rupees in my pocket. What would ensue for the next hour would be a delight for the senses. Eggplants, Okra, plump red tomatoes, wards of fresh leafy greens, gourds- lots of gourds, all sorts of yams and roots, and of course the seasonal fruits- plentiful mangoes, watermelons, lychees, guavas and so on and so forth. Hawkers would sing their songs- lyrics sheer poetry of the best bargain in town. Cast iron weighing scales would be clinking with the sounds of a half-kilo, kilo, cars honking trying to find parking space, and of course the sweetest tune of all, grandma negotiating for every paisa (cent), free green chillies and coriander or she’d walk away- it worked every time, like magic. A skill I am yet to master.
THALI DELUXE is our effort to showcase this bounty of vegetarian treasures and India’s love for vegetable-forward cooking. The food millions eat daily as a way of life, on the streets, canteens and in households.
